The "Stress Free" Dough Processor is
a dough forming system specially designed for the forming of
pre-proofed and soft doughs in a most gentle way without
destroying the proofing structure. For special soft doughs
such as Ciabatta or Baguette Dough with a high content of
water the gentle forming of the dough with "Stress Free" Dough
Processor is one pre-condition for an excellent quality of the
final product.
The dough is taken in from the hopper by large-dimensioned
intake rollers. The gap between these rollers is adjustable to
the required dough thickness. The dough sheet is guided and
supported by a sheeting belt and a support belt onto the
conveyor belt located underneath for the transfer to the
laminating line. The distance between support belt and sheeting
belt is also adjustable. Both belts are dusted with flour to
prevent the dough sheet from sticking during forming and
subsequent sheeting process. |
